In accordance with the European hygiene package regulations, food business operators are responsible for the foodstuffs they place on the market and must ensure that they are not dangerous. To this end, they develop a health control plan in order to define control measures for the hazards identified and verify that these control measures are effective.
The validation and verification of microbiological shelf life (MSL) of foods are part of these control measures.
