The VitaMed thesis on Mediterranean products (nutritional quality) is starting

A new thesis by Tiffany Antoine from the University of Aix-Marseille (AMU) and co-financed by CTCPA and INRA is starting. It deals with the subject: "Intestinal absorption of fat-soluble vitamins: molecular mechanisms, interactions with compounds of Mediterranean legumes and technological solutions (VitaMed)".

The project aims to acquire knowledge of the composition of Mediterranean dried vegetable products, their impact on the bioavailability of fat-soluble vitamins and technological strategies to optimize their nutritional quality.

This knowledge can be directly transferred to all manufacturers in the ready-made meals sector and is aimed at developing new products.
